Abstract: Penelitian ini bertujuan untuk mengetahui cemaran bakteri Eschericia coli dan Salmonella sp. pada susu kedelai tanpa merek yang dijual di Pasar Tradisional Kecamatan Medan Area, Kota Medan.. Penelitian dilaksanakan di Puskesmas Medan Area Selatan dan Laboratorium Biologi Universitas Medan Area. Sampel yang digunakan dalam penelitian adalah susu kedelai tanpa merek yang dijual oleh pedagang kaki lima. Sampel susu kedelai diambil pada pagi hari kemudian dibawa ke laboratorium untuk dianalisis. Tahapan dalam penelitian yaitu preparasi sampel, penghitungan total bakteri, pengukuran pH, analisis bakteri coliform dan Eschericia coli dan analisis bakteri Salmonella sp. Ada 5 jenis sampel susu kedelai yang digunakan yaitu SK1, SK2, SK3, SK4 dan SK5. Dapat disimpulkan bahwa lima sampel susu kedelai tanpa merek yang diujikan yaitu SK1, SK2, SK3, SK4 dan SK5 tidak mengandung cemaran bakteri Salmonella sp. dan hanya sampel SK2 yang mengandung cemaran bakteri Eschericia coli. Pengujian nilai angka lempeng total menunjukkan kelima sampel susu kedelai tersebut sesuai dengan standar aman yang ditetapkan oleh SNI 7388-2009 tentang syarat mutu minuman susu kedelai. This research aims to determine the bacterial contamination of Escherichia coli and Salmonella sp. on unbranded soy milk sold at the Traditional Market in Medan Area District, Medan City. Research was carried out at the South Medan Area Health Center and the Biology Laboratory of Medan Area University. The sample used in the research was unbranded soy milk sold by street vendors. Soy milk samples were taken in the morning and then taken to the laboratory for analysis. The stages in the research are sample preparation, counting total bacteria, pH measurement, analysis of coliform bacteria and Escherichia coli and analysis of Salmonella sp bacteria. There are 5 types of soy milk samples used, namely SK1, SK2, SK3, SK4 and SK5. It can be concluded that the five samples of unbranded soy milk tested, namely SK1, SK2, SK3, SK4 and SK5 did not contain Salmonella sp bacterial contamination. and only sample SK2 contained Escherichia coli bacteria contamination. Testing the total plate number value shows that the five soy milk samples comply with the safe standards set by SNI 7388-2009 concerning quality requirements for soy milk drinks.
