Abstract: Analisis Nilai Tambah Pengolahan Kopi Arabika di Koperasi Kopi Mandailing Jaya, Desa Alahankae, Kecamatan Ulu Pungkut, Kabupaten Mandailing Natal. Petani dikecamatan ulu pungkut sering kali tidak tahu bagaimana cara mengolah kopi yang berkualitas, sehingga tidak dapat meningkatkan nilai tambah dari kopi tersebut. Ketidaktahuan petani dalam pengolahan kopi agar memiliki nilai tambah tinggi mengakibatkan harga jual kopi yang diterima petani rendah. Hal ini menyebabkan Koperasi Kopi Mandailing Jaya membuat industri hilir dari kopi biji menjadi kopi bubuk, Industri hilir ini dimulai sejak tahun 2015 sampai saat ini. Tujuan penelitian ini adalah untuk mengetahui Berapa besar biaya produksi, pendapatan dari usaha pengolahan kopi arabika dan untuk menganalisis nilai tambah yang diperoleh dari pengolahan kopi Arabika menjadi kopi bubuk di Koperasi Kopi Mandailing Jaya. Penelitian dilaksanakan pada bulan pebruari 2022 dikoperasi kopi mandailing jaya desa Alahankae, Kecamatan Ulu Pungkut. Metode penelitian ini dilakukan secara purposive untuk menentukan daerah penelitian, metode purposive sampling untuk penentuan subjek. Metode analisis yang digunakan adalah metode deskriptif, metode perhitungan nilai tambah Hayami dan metode perhitungan pendapatan. Data yang digunakan adalah data primer. Hasil penelitian menunjukkan nilai tambah pengolahan kopi arabika menjadi kopi bubuk cukup besar dan Pendapatan yang diperoleh tergolong menguntungkan. Analysis of Added Value of Arabica Coffee Processing at the Mandailing Jaya Coffee Cooperative, Alahankae Village, Ulu Pungkut District, Mandailing Natal Regency. Farmers in the Ulu Pungkut sub-district often do not know how to process quality coffee, so they cannot increase the added value of the coffee. Ignorance of farmers in processing coffee so that it has high added value results in a low selling price of coffee received by farmers. This caused the Mandailing Jaya Coffee Cooperative to create a downstream industry from bean coffee to ground coffee. This downstream industry started in 2015 until now. The purpose of this study was to find out how much production costs, income from the Arabica coffee processing business and to analyze the added value obtained from processing Arabica coffee into ground coffee at the Mandailing Jaya Coffee Cooperative. The research was conducted in February 2022 at the Mandailing Jaya Coffee Cooperative, Alahankae Village, Ulu Pungkut District. This research method was carried out purposively to determine the research area, purposive sampling method to determine the subject. The analytical method used is descriptive method, Hayami's added value calculation method and income calculation method. The data used is primary data. The results showed that the added value of processing Arabica coffee into ground coffee was quite large and the income earned was classified as profitable.
