dc.description.abstractManisan merupakan buah yang diawetkan dengan penambahan gula dalam kadar yang tinggi untuk mencegah pertumbuhan mikroorganisme dan memberikan rasa manis. Tujuan Penelitian untuk mengetahui kadar zat pengawet asam benzoat yang terkandung pada manisan buah yang diperdagangkan di beberapa pasar tradisional dan pasar modern di wilayah Kota Medan. Untuk mengetahui apakah ada perbedaan kandungan asam benzoat pada jenis buah dan lokasi penjualan yang berbeda. Metode penelitian menggunakan Uji Kualitatif untuk mengetahui ada tidaknya kandungan asam benzoat dan Uji Kuantitatif untuk menentukan besaran kandungan asam benzoat. Pemeriksaan laboratorium dan Analisa data untuk mengetahui kadar asam benzoat manisan buah dari beberapa Pasar Tradisional dan Pasar Modern di Kota Medan Tahun 2019. Hasil penelitian 20 sampel manisan buah kadar Asam benzoat yang diperdagangkan di beberapa pasar tradisional dan pasar modern wilayah Kota Medan berkisar 39,01 – 929,93 mg/kg. Terdapat perbedaan kadar asam benzoat yang diperdagangkan di beberapa pasar tradisional dan pasar modern wilayah kota Medan. Berdasarkan nilai atau koefisien perbedaan Anova dengan nilai signifikansi 0.000 < 0.050. Manisan buah yang tidak berbeda nyata dengan nilai > 0.05 terdapat pada manisan buah kedondong transmart, kedondong petisah, manisan pepaya pasar central, manisan jambu biji pasar central, jambu biji sukarame, jambu biji transmart, manisan salak pasar central, salak sukarame, salak transmart, dan manisan mangga transmart. Candied fruit is preserved with the addition of high levels of sugar to prevent the growth of microorganisms and provide a sweet taste. The purpose of this study was to determine the levels of benzoic acid preservatives contained in candied fruit which are traded in several traditional and modern markets in the city of Medan. To find out whether there are differences in the content of benzoic acid in different types of fruit and sales locations. The research method uses a qualitative test to determine the presence or absence of benzoic acid content and a quantitative test to determine the amount of benzoic acid content. Laboratory examination and data analysis to determine the benzoic acid content of candied fruit from several traditional markets and modern markets in Medan City in 2019. The results of the study of 20 samples of candied fruit with benzoic acid content traded in several traditional and modern markets in the Medan City area ranged from 39.01 – 929.93 mg/kg. There are differences in the levels of benzoic acid traded in several traditional markets and modern markets in the city of Medan. Based on the value or coefficient of difference Anova with a significance value of 0.000 < 0.050. Candied fruit that was not significantly different with a value > 0.05 was found in candied fruit of Kedondong Transmart, Kedondong Petisah, candied Papaya Central Market, Candied Guava Central Market, Guava Sukarame, Guava Transmart, Candied Salak Central Market, Salak Sukarame, Salak Transmart, and candied mango transmart.en_US
