Candied fruit is preserved with the addition of high levels of sugar to prevent the growth of microorganisms and provide a sweet taste. The purpose of this study was to determine the levels of benzoic acid preservatives contained in candied fruit which are traded in several traditional and modern markets in the city of Medan. To find out whether there are differences in the content of benzoic acid in different types of fruit and sales locations. The research method uses a qualitative test to determine the presence or absence of benzoic acid content and a quantitative test to determine the amount of benzoic acid content. Laboratory examination and data analysis to determine the benzoic acid content of candied fruit from several traditional markets and modern markets in Medan City in 2019. The results of the study of 20 samples of candied fruit with benzoic acid content traded in several traditional and modern markets in the Medan City area ranged from 39.01 – 929.93 mg/kg. There are differences in the levels of benzoic acid traded in several traditional markets and modern markets in the city of Medan. Based on the value or coefficient of difference Anova with a significance value of 0.000 < 0.050. Candied fruit that was not significantly different with a value > 0.05 was found in candied fruit of Kedondong Transmart, Kedondong Petisah, candied Papaya Central Market, Candied Guava Central Market, Guava Sukarame, Guava Transmart, Candied Salak Central Market, Salak Sukarame, Salak Transmart, and candied mango transmart.
