Abstract: Penelitian ini dilaksanakan di Laboratorium Mikrobiologi Departemen Biologi Fakultas Matematika dan Ilmu Pengetahuan Alam Univesitas Sumatera Utara pada bulan Oktober 2007 sampai dengan bulan November 2007. Tujuan dari penelitian ini adalah untuk mengetahui adanya mikroba dominan yang mengkontaminasi makanan rujak sehingga bahan dan cara pembuatan rujak dapat dilakukan lebih higienis. Dari hasil penelitian mikroba dominan yang mengkontaminasi rujak diperoleh data : Sampel 1. EMB = 28 x 10 5, SSA = 28 x 10 5, NA = 85 x 10 5, PDA = 75 ; Sampel 2. EMB = 82 x 10 5, SSA = 30 x 10 5, NA = 124 x 10 5, PDA = 73 ; Sampel 3. EMB = -, SSA = -, NA = 39 x 10 5, PDA = 60; Sampel 4. EMB = -, SSA = 2 x 10 5, NA = 76 x 10 5, PDA = 78; This research was conducted at the Microbiology Laboratory, Department of Biology, Faculty of Mathematics and Natural Sciences, University of North Sumatra from October 2007 to November 2007. The purpose of this study was to determine the presence of dominant microbes that contaminate rujak food so that the ingredients and methods of making rujak can be done more easily. hygienic.
